Casablanca sits very close to the equator, anywhere else on earth would prove too humid and hot for production of quality grapes. Thanks to its proximity to the Pacific Ocean which moderates the region with cool temperature and heavy maritime influence.

Viticulture

Sauvignon Blanc and Chardonnay thrive under this cool condition, Casablanca white wine is blessed with unique balance of fruit and minerals due to the mixture of clay and sand soils covering most of the region.

Winemaking

Sauvignon Blanc from Chile now has gained international attention; mixed with the passion and professionalism of the local vintners, the cool-climate of areas such as Casablanca, San Antonio, Coastal Aconcagua or Limari, holds the key to growing such a refined grape. Strongly flavored, a sip of Sauvignon Blanc takes you to a dreamland of citrus fruit aromas, sour apple, and zingy pineapple. With a stony mineral edge, it is easily paired with shrimp, white fish, salads, or blue cheese, making it a refreshing summer wine.

Another world favorite amongst white varieties, Chardonnay is a grape that strives in the cooler climate areas such as Casablanca, San Antonio, and Limarí, taking its mineral edge from dry stony soils. Soft and well-versed, Chilean Chardonnay features tropical fruit flavors with moderate acidity. The Chardonnay’s complexity allows it to age for a few years, making it a perfect pair for fish and white meats, as well as corn-based dishes.
